il Porcellino Salumi
In 2015, Denver got its first salumeria when Chef Bill Miner opened il Porcellino, a deli featuring flavorful old-world salamis made from the best Colorado-sourced ingredients. In 2018 Miner was crowned Grand Champion of Charcuterie Masters (NY), and in the months that followed he opened a wholesale location in Basalt. Keep your eyes on il porcellino (we sure will); their website promises a delicious future of mustards and pickled vegetables available at a retail location near you (that’s us!)
